Keto Chocolate Chip Bars

Say ”sayonara” to those sweet carbs trying to block you from your keto goals! The first week on a keto focused meal plan is theee hardest. You try your best to rid your mind of all cravings but they are still peeking over your shoulder. The Keto Chocolate Chip Bars make the transition smoother because you don’t feel like you are missing out! I’ve been making these soft, chewy treats for over a year. They constantly help me in my vulnerable moments.

This recipe is on your side because it’s sweet and satisfying while contributing to your macros. One serving is simply 2 grams of carbs but you have space for a few mo’ pieces. My preferred sweetener is the Lakanto Monk Fruit Sweetener because it has zero after taste. Also, don’t skimp on the xanthan gum, it gives the bars a soft brownie-like texture.

I’m not going to hold you with a whole autobiography before the recipe. Let’s get to it.

Ingredients

8 ounces of cream cheese (room temperature)

1/2 cup unsalted butter (room temperature )

1 cup of Lakanto Monk Fruit Sweetner

5 eggs

2 tsp vanilla extract

1 cup almond flour

1/3 cup of coconut flour

1/4 teaspoon sea salt

1 1/2 teaspoons of baking powder

1/2 tsp xanthan gum

1 cup of sugar-free chocolate chips 

1 cup of chopped walnuts

1/2 cup pecans

Instructions

Preheat oven to 350 degrees.

Line a 8×8 inch or 9×13 cookie sheet with parchment paper.

Using an electric mixer beat together the butter, cream cheese, vanilla extract and sugar substitute. 

Add the five eggs; ONE AT A TIME, mix well making sure the eggs are well incorporated.

Fold in the baking powder, coconut flour, almond flour,, salt, and xanthan gum.

Stir in the sugar-free chocolate chips, pecans and walnuts .

Spread the batter evenly into baking pan.

Cut off excess parchment paper.

Bake for 30-35 minutes or until golden brown.

No longer than 35 mins! The batter may still be soft but continue remove the pan from the oven. Allow it to cool and set.

It will fail the ”clean toothpick” test that bakers use to see if a cake is done.

Allow cookie bars to cool completely before slicing.
