Shrimp and grits are a requirement where I’m from. My Charleston fave doesn’t fit into my 60-day keto challenge so we are going to flip the switch!! I know you are bewildered “Low carb grits? “ No, that hasn’t been discovered yet but we are giving riced cauliflower a creamy treatment to mimic grits.

Ingredients
- 1 lb. Jumbo raw shrimp, peeled and deveined
- 1 tablespoon Cajun Seasoning
- 1 teaspoon crushed red pepper flakes
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Crushed red pepper, to taste
- Lawry’s Seasoning Salt, to taste
- 3 tablespoons avocado oil
- 2 tablespoons minced garlic
- 2 cups frozen riced cauliflower
- 1 cup diced sweet onion
- 2 tablespoons butter
- 1 cup smoked gouda
- 1 1/2 cups chicken broth
- 4 ounces cream cheese
- salt & pepper
Directions
- Season shrimp with cajun seasoning, garlic powder, onion powder, paprika. Be careful not to overseason the shrimp
- Heat two tablespoons avocado oil in a large skillet over medium heat. Cook shrimp until slightly charred but still pink, about 4-5 minutes. Set aside.
- Add 1 tablespoon of butter to the pan. Toss in sweet onions and garlic. Saute until tender, about one minute. Add riced cauliflower and remaining butter. Saute until golden, 2-3 minutes.
- Pour in chicken broth and let it come to a boil. Reduce heat to a simmer and stir in cream cheese. Let the mixture simmer for 4-5 minutes. Add gouda cheese, crushed red pepper, dash of Lawry’s and pepper. Stir until mixture is well combined and thickened.
- Serve shrimp over creamy Smoked Gouda Cauliflower Grits. Enjoy!
